Before establishing his Bali empire, he honed his craft across Europe and Asia, working at prestigious establishments including Le Méridien Beach Plaza, The Ritz-Carlton Sanya, and the luxurious Mandapa, a Ritz-Carlton Reserve property in Ubud.

Those experiences across continents ultimately shaped his philosophy: blending heritage with innovation, and personal touch with professional excellence. When the opportunity came to open his own restaurant in Bali, Bombini seized it—naming the flagship venue after his childhood nickname as a symbol of that personal connection.

A Transparent Philosophy Behind Glass Walls

MAURI Restaurant distinguishes itself through an open, glass-encased kitchen—a deliberate design choice that reflects Bombini's commitment to transparency and craftsmanship. The menu showcases seasonal, locally-sourced ingredients prepared with modern techniques, creating a bridge between Apulian tradition and contemporary dining expectations.

The restaurant's commitment to excellence has earned consistent recognition. Since 2021, MAURI has been acknowledged annually by Wine Spectator, and in 2024, it became Indonesia's first member of the prestigious Dom Pérignon Society, curating rare vintages and exclusive cuvées that elevate the wine experience.
