Chef Theo Setyo Celebrates Indonesian Cuisine at Padma Resort Legian

Celebrated Indonesian Chef Theo Setyo Brings Culinary Mastery to Bali
Padma Resort Legian is set to host a prestigious two-day culinary event this June, bringing together some of Indonesia's most accomplished chefs for an exclusive celebration of the nation's rich gastronomic heritage. The highlight: a special guest appearance by Chef Theo Setyo, one of Southeast Asia's most influential voices in modern Indonesian cuisine.
Chef Setyo, renowned for championing Indonesian ingredients and regional dishes on the international culinary stage, will collaborate with the resort's kitchen team to create two distinct dining experiences that blend authentic tradition with contemporary refinement. This rare appearance underscores Bali's growing reputation as a destination for serious food enthusiasts.
The Nusantara Table: A Four-Hands Collaboration
On Friday, 26 June, DONBIU Restaurant will host "The Nusantara Table," a one-night-only buffet dinner that honors Indonesia's deep culinary roots. The event features a four-hands collaboration between Chef Theo Setyo and Padma Resort Legian's Chef de Cuisine, Chef Arif Surya Priyanto.
Chef Arif will present elevated takes on Indonesian classics, including Sapi Wagyu Maranggi (marinated Wagyu beef), Royal Mangut Salmon, and Otak-Otak Bandeng (a traditional fish cake specialty). Chef Theo Setyo will showcase his signature dishes, among them:
- Gulai Kambing – a family-favorite goat curry that has become his calling card
- Bebek Bacem – slow-cooked duck infused with aromatic spices
- Ikan Kuah Arsik – fish in a complex, layered sauce that exemplifies his approach to traditional recipes
Diners can complete their meal with traditional Indonesian desserts such as Klepon (glutinous rice flour balls) while enjoying specially curated Balinese and Indonesian-inspired cocktails priced at IDR 138,000 per glass.
Mediterranean Meets the Archipelago: A Six-Hands Experience
The celebration continues on Saturday, 27 June at SKAI Bar & Grill, where the culinary team expands to six hands. This ambitious collaboration brings together Chef Theo Setyo, Chef Samuel Barus, and Chef Manu Gultom to create "Woodfire Mediterranean Meets the Archipelago"—a concept that explores the intersection of Mediterranean cooking techniques with Indonesian flavor profiles.
Set against SKAI's beachfront backdrop with expansive skyline views, the dinner promises an innovative exploration of how global culinary traditions can enhance rather than overshadow Indonesia's distinctive regional tastes.
Why This Matters for Bali's Food Scene
Chef Theo Setyo's appearance represents a significant moment for Indonesian culinary recognition. Rather than simply serving "fusion" cuisine, his philosophy centers on deepening respect for indigenous ingredients and traditional cooking methods—an approach increasingly valued by international diners and chefs.
These events showcase how Bali continues to attract world-class culinary talent and serve as a platform for celebrating Indonesian gastronomy beyond superficial tourism experiences.
