The showcase features Chef Fei's signature set menu priced at IDR 1,888,000 (approximately USD 120) per guest, supplemented by à la carte selections. This year's edition marks a significant collaboration with Kaviari, one of the world's most prestigious caviar suppliers, elevating the culinary experience with premium baerii caviar integrated throughout select dishes.
The menu reveals Chef Fei's philosophy of marrying tradition with innovation. Standout dishes include chilled crab meat jelly, tofu tart, and crispy seafood bean curd roll, each featuring Kaviari's signature caviar. The braised fish maw soup with coral grouper showcases respect for classical Cantonese technique, while wok-fried lobster with garlic king soy sauce demonstrates the chef's mastery of wok cooking.
